Bancha is made from the second, third and fourth harvests that are picked later in the year, as opposed to Sencha which is the first main harvest of the year. It is processed in exactly the same way as Sencha but has a gentler, less intense character. The taste is also less bitter because Bancha is made from slightly older, larger leaves in which the caffeine level is lower.
