The beautiful dry leaves of this very special jasmine tea are scattered with pretty silvery leaf buds that are covered with tiny white hairs, which gives the tea its name. Known in Mandarin as the Bai Hao, the fur acts as a winter jacket for the buds and protects them from cold winds, chilly rain and insects. Once plucked, heat-treated and gently rolled and dried, the tea is mingled with fresh jasmine flowers at night and then removed in the morning. The very best teas are scented up to eight times, each night with a fresh batch of blossoms.
