Oolongs are defined as ‘partially oxidised teas’ and span between unoxidized green teas and fully oxidised black teas. The greener jade oolongs are 20-30% oxidised and have a light floral character with hints of lily of the valley, orchids and narcissus; dark oolongs are more heavily oxidised and are therefore darker in colour and stronger and richer in flavour, with flavours of figs, dates, plums and peaches in the top notes and caramelised toasty notes below.
