How to brew
Background
In the early 20th century the British wanted to encourage local people to drink more of the tea - or ‘chai’ - that was being grown in India. Workplace tea breaks were introduced, and ‘chai wallahs’ began selling British-style hot tea with milk and sugar on street corners, trains and at railway stations. Some added spices and herbs and so chai, as we know it, was born.
