Our rare Pai Mu Tan White Peony comes from the Fujian province of China. It is a white tea made from tightly curled buds and unopened young leaves plucked in the early spring. It produces a pale-yellow infusion with fresh, delicate flavours.

White teas are the least processed of all the tea categories. To create white tea, after careful plucking, the tea shoots are allowed to dry very slowly, first in shady sun and then indoors. As the leaves and buds gradually lose their water content, they develop delicately floral and fruity notes, such as the ones found in our delightful White Peony tea.
